Made with Shiraz sourced from Grampians in Victoria, the 2019 vintage was warm and dry, resulting in good quality fruit.
The Shiraz was fermented in open fermenters with a small portion (10%) of whole bunch bunches to build structure and a savoury profile to the final blend.
Once ferment was complete, the grapes were pressed and racked into new and older French oak barrels for secondary fermentation and maturation. After 12 months in oak, the wine has been hand bottled unfiltered and unfined.
The Shiraz is bright in the glass, there is plum and boysenberry on the nose. The palate is fresh and lively with dark fruits, cocoa and vanilla oak influence, chewy texture and a delicious long, savoury finish.
